The Romero Family
The legend of our winery dates back to the mid-17th century. In 1630, before the revolt of the Duke of Medina Sidonia against Philip IV, the Romero brothers of La Balsa were already winemakers and continued this beautiful activity uninterruptedly for more than 10 generations.
Don Manuel Barón Fernández
In 1895, Don Anselmo Paz and Dolores Romero Sánchez, the last heirs and managers, sold the Romero family's old soleras to Don Manuel Barón Fernández, thus beginning a new dynasty in the history of this winery. At that time, Don Manuel Barón transformed the business model of this ancient winery, changing it from a wholesale winery to one that bottled its own wines. Brands such as Atalaya and Pino Viejo were born during that period.
Don José Rodríguez Jiménez "XIXARITO"
Eighty-nine years passed before the next dynastic change, in 1984. After a turbulent period for the Jerez region in the 1970s, the wineries at 2 Molinillo Street, formerly owned by the heirs of Don Manuel Barón, became the property of Don José Rodríguez Jimenez, known in the streets of Sanlúcar as “El Xixarito.” This enterprising Sanlúcar native, with his keen business sense, placed his trust and hope in restoring his winery to its former glory.
With Don José managing the wineries, new achievements were reached, such as exports to Asian countries like Japan and China, the acquisition of the El Poedo Vineyard and the El Hato Vineyard, and the creation of brands that endure to this day, such as Micaela.

Since 2011, Don José and Don Félix, his two heirs, have continued the work of maintaining the winemaking tradition of almost four centuries, always at the forefront, just as their father taught them. This is how they decided to immerse themselves in and commit to a project that leaves no one indifferent, with the renewal of the image of their products, taking a leap into avant-garde design never before seen in Jerez wines, with the confidence of reaching new international markets.
During these years another important event occurred, namely the birth of a new winery in the El Hato vineyard, dedicated to the winemaking of barrels for whiskeys, reaching the same number of wine barrels as the ancient winery on Molinillo Street 2nd in just over 4 years.
A new era
This year, the younger generation of the Rodríguez family has decided to support the family business by opening their wineries to the public. From tours and wine tastings at Bodegas Barón, to unforgettable afternoons at sunset in the El Poedo vineyard, to celebrating life's most important days at Finca Barón, located in the El Hato vineyard. In this way, we aim to give locals and visitors alike the opportunity to learn about our history firsthand and enjoy, as we do, the legacy of our grandfather.

Currently, the Rodríguez Carrasco family owns two vineyards; El Poedo and El Hato.
The El Poedo vineyard is located in the area near Sanlúcar de Barrameda, in the Jerez Superior region, on hills overlooking the mouth of the Guadalquivir River. It comprises 49 hectares of its own vineyards, with albariza soil and constant humidity, making it a unique enclave for vine cultivation.
The same applies to the El Hato vineyard, located on the A-480 ring road, which has an area of 5.7 hectares of albariza soil.

Since 1984, Bodegas Barón has owned the Viña Parpalana wine press, one of only 20 in the Jerez region. Having their own press allows the family to maintain complete traceability of their wines, from the grapes, through the crushing and fermentation of the must, to the aging process in the cellar.

Currently, Bodegas Barón has two aging cellars in Sanlúcar de Barrameda, the old cellar on Molinillo Street 2nd and the new cellar in the El Hato vineyard.
Since 1631, its main warehouses have been located in the upper part of the city, exposed to the Atlantic sea breeze. This is not a winery built on a foundation of financial resources; rather, it has grown decade by decade, century by century, from family to family, going from a small winery more than 390 years ago to having 11 wineries in the same location today, with major expansions at the beginning of the 19th century and in the mid-20th century.
At the new facilities of Bodegas de El Hato, we find the winemaking process for whisky casks. For over 10 years, we have worked with the world's leading distilleries, adding our touch of southern Spain to their finest whiskies.
